What is the overall concept and inspiration behind Meat Market?
We are a modern influenced steakhouse, not just featuring steaks and sides but other modern influenced cuisines related to steak and seafood. We also feature a wide array of crudos and sushi.
What is your favorite dish on your menu?
Our menu has several different aspects to it. We have the Meat Market standards that change occasionally, and we have the daily creative menu that features several different items every day. Personally, I like the newest creations, whether it be a creative steak or fish of the day. It’s always changing and evolving.
What drew you to working with Meats by Linz?
During the pandemic lockdown, we were still operational, and I lost access to my regular meat vendors, so I started meat shopping and interviewing several different companies nationwide. The sales representative and Linz team was one of the most professional groups I had the chance to work with. The quality of the product also stood out above the rest.
What is your favorite part about working with Meats by Linz?
The team – Fred Linz and Peter Heflin, as well as many others. They are great to work with and listen to my ideas when it comes to helping with new cuts and gathering information on the products.
What is your favorite cut from Meats by Linz?
The Dry Aged New York strip is some of the best I have ever had.
What is your best advice for a chef/restaurant owner when it comes to running a successful business?
Know your customer base and listen to their likes and dislikes. If you try a special and get an amazing response, then the guests have provided the feedback that helps you build your brand.
